Maybe a vacuum food sealer will help. I try to ferment or dehydrate as much as I can, but sometimes that needs more time than I have when the produce is available. I just bought a vacuum sealer and am experimenting with single items of fresh produce. At least, hopefully, that will buy me some time to process it before it has to go into the compost.
